My FIRST Attempt at Freezer Crockpot Cooking!

As I said in my post last week, I am ready to try the freezer crockpot cooking.  Basically, you do all the prep in one sitting and put the ingredients in a gallon freezer bag.  Place the sealed bags in the freezer, and you've got an easy meal to put into your crockpot!!
Well, I wanted to start small and be realistic.  I basically didn't want to try to overdo it on my first attempt and then decide that I never wanted to try it again.  So, I picked 8 recipes and did my first trial.
I got everything laid out on my counter and began chopping!!

Above, you can see I have everything I need all chopped into pieces.  Pictured are diced chicken breasts, diced onion, diced red and green peppers, cut carrots, cubed zucchini, and minced garlic.

And, here's the final product...8 meals in gallon freezer bags ready to freeze!!

So, it definitely was a learning experience....I found I wasn't as organized as I needed to be.  I found myself continually flipping through my recipes as I was filling the bags.

The worst part for me:  cutting up 7 onions!!!  Very difficult and tearful for me. (Any suggestions???)
The best part: having 8 easy meals ready for the crockpot when school starts!!

Here's the recipes I made:
  • Chicken Taco Soup
  • Teriaki Chicken
  • Cilantro Lime Chicken
  • Italian Sausage and Peppers
  • Santa Fe Chicken
  • Turkey Fajitas
  • Peanut Chicken
  • Sweet N Sour Chicken
I'll link to the recipes in case any one wants them.
One definite thing I would do differently: I made a huge pot of black beans earlier in week and froze them in small containers.  The next time I'll cook the beans on the same day and add them to the bags.  One less step to do.
